A Journey Rooted in Heritage

For Ali Yavuz, everything began not with the idea of building a business, but with the desire to preserve what already existed. Born and raised in the heart of Kapadokya, he transformed his own home into a small guesthouse in the early 1990s: Kelebek Cave Hotel.

 

It was a modest beginning, but the philosophy was clear from the start: Not to build something new, but to protect and revive what was already there.

 

Stone walls were restored, old living spaces were brought back to life, and the authentic spirit of Cappadocia was preserved. Over time, this approach expanded into a broader hospitality vision—hotels, experiences, and cultural spaces. Yet within all this growth, one essential piece was missing: The true cuisine of Cappadocia.

 

Seten was born from that absence. Not to open just another restaurant, but to complete a cultural experience.

SETEN RESTAURANT
More Than a Restaurant

Seten Restaurant was never designed as a conventional dining venue.
The idea was simple but ambitious: to create a place where Cappadocia is not only seen, but truly experienced.

The name itself reflects this philosophy. “Seten” refers to the traditional stone milling system once used in Anatolia to grind wheat—slow, natural, and deeply rooted in heritage.

The architecture embodies this mindset:

  • Carved stone spaces

  • Arched structures

  • Areas reflecting the region’s traditional character

This is not a constructed atmosphere—it is a preserved past.

Seten evolved over time. It is not the result of a fixed concept, but of continuous refinement, experience, and an ongoing pursuit of authenticity.

Seten’s cuisine does not follow trends—it preserves origins.

Each dish reflects centuries of Anatolian culinary tradition:

  • Clay pot (testi) kebabs cooked over fire

  • Slow-cooked tandoor-style meats

  • Traditional handmade mezes

  • Regional specialties

Cooking here goes beyond the kitchen. Fire, time, and traditional methods remain essential parts of the process.

The philosophy is simple, yet uncompromising: Not to cook fast, but to cook right.

Seten Restaurant has never aimed to simply serve food. Its purpose is to let guests experience Cappadocia. Because some places are not just visited, They are remembered.
